Last night we had childhood fun….

I was making a recipe that called for whipped cream and alas, I had none… I made some…..and Lo and I got to lick the beaters b/c I decided to use the old hand-mixer …mmm, mmmm, MMMMMM

As you can see he was in HEAVEN!!! lol Even Colin mentioned that it was Great whipped cream. I told him that he had probably only ever had the homemade stuff older (sorry Grandma) people make – they NEVER add enough sugar. I add both sugar & vanilla, not much but the two flavours make it AMAZING!

I was trying to make a frozen peanut butter cheesecake….since me, and what appears to be the ENTIRE foodie community, were still on a pb kick. the original recipe can be found using the link at the top of this post.


  • 1/3 cup butter
  • 1 cup semisweet chocolate chips
  • 2 cups crispy rice cereal
  • 1 (8 ounce) package cream cheese, softened
  • 1 (10 ounce) can sweetened condensed milk
  • 3/4 cup peanut butter (I used less pb)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream (if you make it yourself too just use 1/2 cup whipping cream, 1Tbsp sugar and 1 tsp vanilla)
  • 1/2 cup chocolate fudge sauce (to pour on top)
so if you want to know how I made it follow along… I melted the butter & chocolate chips

then you remove chocolate from heat and mix the rice krispies in until evenly coated….

then grab a 9inch pan (I think you ould do a 10 inch one too) and press the mixture into the bottom and sides….I found using a oiled folk worked best :) then throw it in the fridge

the recipe says to whip the cream cheese first until fluffy, but I decided to throw in the cream cheese, condensed milk & pb and whip them up all at once. ….looked fine to me.

then you literally FOLD the whipped cream you made into the rest of the stuff. Folding (for those of you that don’t know) is done to avoid having excess air in the batter(?) lol

pour everything into the refrigerated crust top /w chocolate and throw in the freezer for a MINIMUM of 4 hrs…..enjoy!  and yes, I do realize I fell short on the chocolate drizzling…oh well :(

When I tried to cut into this today and it literally FELL APART! and that’s when I realized that my foodie blog is SOOOO AMATEUR lol…oh well, I’m just a normal girl trying to make things, not a masterchef!
