Last Nights Dinner – Cashew Chicken

Once again I was out of any recipes I had managed to conjure up (I still have one “Ali Original” I want to show you but I didn’t have the ingredients on hand) so I searched on the Kraft website and found a recipe for cashew chicken; one of my favourites if I go eat Thai. (though I usually get it /w tofu)

So Let’s get another recipe on the go…I did end up changing a few things but I think the original recipe would be just as good.


  • 3-5 boneless skinless chicken breasts cut into bite-size chunks
  • 1 Tbsp corn starch
  • 1 Tbsp soya sauce
  • 1-2 Tbsp olive oil (divided)
  • 2 cloves of garlic (minced)
  • 1 cup chopped broccoli
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped red onion
  • 1/4 cup Catalina Dressing
  • 1/2 cup big cashews. 
Mix chopped raw chicken, corn starch and soya sauce and put in fridge for 15 mins. I just found out through this recipe that corn starch binds sauces to meat. Most of you chefs are like “Duh, Ali” but I was amazed and wish I had known this sooner! I could tell the difference. 

Chop ALL veggies and garlic…. (the original recipe has ginger so add some too if you’d like)

Ration out your cashews and set aside. Hopefully they aren’t bulk barn crumbles like mine 😛

In skillet sauté onion and garlic on med-high /w half of the olive oil for 1 min until brownish and then add in the chicken and cook.

once the chicken is fully cooked remove from pan and set aside in a bowl.

Then add remaining olive oil and toss in the veg and satué until cooked. I like to really get mine crispy and fry it up nice when doing a stir fry. I really need a wok! 

Then you can go ahead and add the chicken mixture back in (Oh and you should be cooking rice to go /w this – sorry forgot) and heat on med until everything is cooked through.

Then add your Catalina dressing (I added more than 1/4 cup) just use your best judgement. Stir until fully incorporated.

Serve with Salad (or in my case spinach and carrots) and on top of rice. YUM!!!

Ali Mc gives this easy and quick family recipe 1 thumbs up! mainly b/c my other hand is holding my folk and there’s no way you’ll be able to pry that from me once eating has commenced!


1. What’s your favourite stir fry?
– anything /w chicken. I’m not a huge red meat eater. I love LOVE tofu fried….it’s amazing

2. What was your workout today??
– Unfortunately nothing, I didn’t get my run in b/c Logan woke up and so we just went for a walk instead. I will try to run at night when I get home from work. 

3. Any tips for maintaining your weight??
– I ask b/c I’ve been slowly adding back poundage. I know you’re all screaming at me “Ali look at what you eat” but I like eating crap….just tell me how hard I need to work to maintain this lifestyle 😀 lol

  1. This looks delicious. I love making stir fries and fried rice and we probably eat that at least twice a week. Today's workout = 4 mile run.

  2. Just so you know, that would have been jamming without the addition of the Catalina sauce. The Kraft only had you add it because it was on the Kraft website. You body will only feel as good as the food you put into it. Put in crap and you'll feel like crap. Feed it good, Whole, unprocessed food and it will feel great. Granted, I have my days of candy corn and such, and no, you don't have to go organic.

  3. I love stir fry's! There is a restaurant called the Flattop Grill where you pick what you want in your stir fry from a buffet, and take it up to the grill where they grill it for you. I dont know if they have those up in Canada but IT IS AMAZING!

  4. Stir fry with tofu is a definite must for me! I also really love eggplant in my stir fry.

    Today's workout was strength training.

    Tips for weight? Trying to eat foods that make you feel super full so you don't overeat. Think whole grains and nuts. I am a big almond and walnut eater! I always take some version of trail mix with me at work or when I run errands to keep in my purse.

    @Holly – I completely agree Holly :) I thought the catalina did add an extra zing though. I've only made 2 things off the kraft website one was this and one was a pumpkin cheesecake my reader patty told me about, both were great! no complaints. Thanks for the eating tips 😀

    @Kara – I only ate shrimp while I was prego….weird I know 😛

    @Garden Girl☺ – There's something like that here, called the mangolian grill I think. It's in a neighboring city….I may need to go there now! lol

    @thisgirlcanrun – mmmmm I love both tofu and eggplant. Colin doesn't though, he doesn't like a lot of things. It makes family dinners difficult. I'm surprised he let me put mushrooms , zucchini and broccoli in my last dish! LOL he's definitely coming around.

    Good call. I'm just in denial it's the treats I keep eating.

  6. yummy, that looks great! me and kev are completely in love with our Wok and love trying out new stirfrys and this recipe looks like itd be completely awesome in the wok. we have a really great spicy chicken recipe that we do from time to time. i'll need to post it on the blog soon 😉

    maintaining weight is SO much harder then losing weight in my opinion..its something I myself have to constantly work at because I love eating treats as well. when it comes down to it, i just try to make sure that my "good" days completely outweight my "bad" days

  7. I think Jason might leave me for you if I show him this post… haha. Seriously though, he loves stir fry and cashew chicken is one of his faves. So I am definitely going to have to give this a go in the near future.

    I really want to get a wok or at least a bigger pan, so I can do more things like this… I do make a pad thai, but I haven't quite perfected it yet… they still do it way better at the little restaurant we go to. I need to learn their secret!!!

    I did a really pathetic workout today also, just a few miles, with a lot of breaks… my stomach was on the fritz.

    Tips for maintaining weight? Well, I've been working on gaining weight over the past few months and have put on a whole 10 pounds! Maybe just a little more… I did that by cutting down my mileage and eating more often throughout the day. So, I guess to lose weight I'd do the opposite… slowly add in more mileage or supplement with cross training and then eat… I don't know if less is the best idea… but maybe just healthy? Maybe just look for "extras" desserts and snacks and slowly cut back… ??
