Triple-Treat Cookie Explosion!

Well if that title didn’t grab your attention, I don’t know what will! That’s right folks. I was cruising my usual baker blogs searching for a new cookie recipe I hadn’t tried yet and once again I took something from The Brown-eyed BakerPeanut butter Oatmeal Chocolate chip Cookies!!!!!!! OMG :D If you have never been to her blog I suggest you make your way over there. Not only are her recipes phenomenal her food-tography is too!

So Lets grab the following ingredients and get started:

  • 1 cup flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter @ room temp
  • 1/2 peanut butter
  • 1/2 white sugar
  • 1/3 cup brown sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 cup rolled oats
  • 1 cup semi-sweet chocolate chips
OK go get your kids and put them to work and while you’re at it PRE-HEAT your ovens to 350F

Directions:
whisk together flour, baking soda and salt and set-aside….or ask your toddler to do it but please remind them NOT to eat the flour. 

Get your mixers out or a mixing bowl and toss in the butter, pb, sugars and vanilla – mix until creamy…make sure your toddler doesn’t still have the whisk and definitely make sure that whisk does NOT make it into the pb….argh! Logan!!!

Then add the egg and make sure to mix on LOW speed until incorporated.

**Side note for other food bloggers – If posing for a picture please a) make sure you are wearing make up and don’t look like a homeless person and b) make sure your child is well out of finger-to-mouth distance when smiling wide with mouth slightly ajar. **

Mix in the flour dry mix and then the oats and finally the chocolate chips…..until you have this amazing cookie dough!!! YUM

Yep, we’re ruining our child by letting him eat all the sweets in the world! Sorry Future Logan for your love of sweets and goodies is ALL my fault.

scoop dough into balls, clumps or whatever and spoon onto NON-greased cookie sheets. Place in the oven for 10 minutes or until golden on top.

Cool on a cooling rack – or in my case b/c my Uncle snatched all my late Grandma’s up use a serving plate :D

I chose to make my cookies pretty big. Colin was not impressed b/c he likes LOTS of little cookies….but whatever I was making these WHILE making dinner….how awesome am I?? seriously, people would kill for wives like me!

I also “wasted” – Colin, some batter to make one ginormous cookie for Logan, which I ended up eating some, most, ALL of ;) *blush*

The water all over his front is b/c he refused his bib and insisted on a real cup. Classic

Overall these cookies were pretty good. There was just a hint of pb though, so if you’re like me and would prefer a cookie that tastes more peanut-y then add more pb and use less butter :D ENJOY another spatula licking treat recipe from RwS!

    What you didn't dress up in your heels and pearls to simultaneously make rockin' cookies and dinner at the same time?! Haha! Don't worry, you are still one totally gorgeous lady even without makeup!

  3. Oh, I forgot to answer the questions. So I love my mom's chocolate chip. They're just amazing. A close second is white chocolate chip and macadamia nut.

    My fav way to eat cookies is actually in dough form, but if they are baked, I either like them fresh from the oven, or after they've been refrigerated. Weird, huh? I don't know, I just do.

    Wow, I'm really craving a big chewy chocolate chip cookie now. Especially with peanut butter in it!

    And actually, I don't like my cookie dipped in milk, but I do love it crumbled over icecream :)

    I think my favorite cookie is a toss up between chocolate chip and double stuff oreos… I don't know why I love them so much, but I do.

    Best way to eat them… right out of the oven, or I'm with you… in ice cream!
