Baked Potatoes gone wrong(?) & Yummy “Trees”

Last night I tried to make twice baked baked potatoes. It was an epic fail…..

…or was it?

I used normal yellow potatoes (5 of them) and not the baking kind so when I removed them from the oven, they weren’t cooked. sigh – off to the microwave they went.Β 

The issue was that I had already mixed up all these amazing ingredients into a bowl:

  • 1 cup sour cream
  • 5 pieces of cooked bacon
  • chopped chives
  • one slice of red onion – chopped
  • 3/4 cup milk
  • 1 cup of cheddar cheese – grated
  • 1/4 cup of cream cheese
  • salt & pepper to taste

so once the potatoes were cooked the skin was so thin I obviously couldn’t use them as baked potatoes – they weren’t baking potatoes.

So I did what any mom trying to make dinner does and I improvised….

  1. I already had the oven pre-heated to 350F
  2. I tossed the cooked/chopped potatoes in the bowl with all those yummy ingredients (left the skins on) and MASHED THEM!
  3. Then I threw them in a casserole dish and baked them for an hour.

The result?

The most heavenly, heart attack and lover-of-all-things-bad-for-you combination I’ve ever eaten ……

who needs the baked potato when you can just make the inside?!?!?!?

I loved it!!!!!!!!!

we had it with caesar salad, cucumber coins and Colins amazing fried chicken. YUM

not the healthiest of meals, but this isn’t a healthy eating blog πŸ˜‰ I’m sure Char is happy we have a load of cheese back in our recipes :)


In other recipe news I made this awesome baked broccoli a few days ago and ate it all! It was so quick and easy too so I highly recommend it if you want to spice up a veggie for a side dish and don’t have a lot of time.


  • a bunch of broccoli
  • 2 Tbsp olive oil
  • 2 cloves garlic minced (I used garlic salt instead and it was amazing)
  • salt and pepper to tasteΒ (omit salt if you use garlic salt)
  • 1/3 cup parm (shredded)
  • 1/3 cup bread crumbs


  1. Pre-heat oven to 425F
  2. wash and chop broccoli into small pieces – toss in a bowl
  3. throw the rest of the ingredients in and toss until evenly coated
  4. spread out in a single layer on a baking sheet
  5. cook in the centre rack for 15 mins.

I felt like I was eating broccoli chips – so good!!!!

I also tried tackling the athletarian’s sweet potato chips, but I think I’d prefer them as fries – although Logan loved them so SCORE!!!

I love broccoli but both Colin and Logan hate it. Logan always calls them “trees” and asks for it, but then spits it out as featured in this post.Β

  1. The broccoli looks amazing. I am going to try that for sure. Not really cooking up anything gourmet for the next few days. keeping it simple. My daughter’s birthday is Thursday so I have a cake and a cookie cake to make. Fun times for sure!

  2. Niceeeee save! Broccoli is actually one of my favorite foods- i could eat it 100 different ways. Fun fact – it is also the dogs favorite food. She goes nuts for it!

    I made a flour-less chocolate cake today which is absolutely delicious! I really want to get cooking a bit more now that I’m at home.

    When I was little broccoli was pretty much my least favourite vegetable but now I love it. It’s great in stir-fries and your roast version sounds great :-)

  4. I hate broccoli! Its so gross to me. πŸ˜€ Actually I hate most green foods. Spinach, lettuce, brussels sprouts. I know, im so very healthy. πŸ˜‰ hahaha
    But your potatoes look awesome!!!!

    As for the broccoli, a fav! I love the stuff. My favorite way is simply steamed with lemon squeezed on the top :)

  7. You could put sour cream and bacon on a bumper and I would eat it. Heehee
    My fam can not get enough of the roasted broccoli. We just do olive oil, sea salt and pepper and roast at a high heat until tender and the leaves are crispy. They love the crispy parts.

  8. OMG Ali!! I want to come over right now and eat those potatoes!!! Seriously though they look amazing! Potatoes are one of my favourite things ever and that ingredient combination sounds heavenly!

    I am liking broccoli lately in the form of soup! I have been making Tosca Reno’s eat clean broccoli “cheddar” soup and it is sooo yummy!!

  9. Looks yummy! We’ve been cooking lots of meat-potatoes for my parents this week. L is not picky, but she doesn’t go for broccoli either. Maybe she would in that form? It looks delicious!
