Whole Wheat Banana Pancakes

I didn’t have any money last week. I was literally waiting for that paycheck to come. Life’s so much fun when you have to live by the seat of your pants ;P

So I decided to try and make something for breakfast using the old bananas that sat on the counter. I started tossing ingredients in and made my first ever pancakes from scratch!

I know, I know. Surprising isn’t it – especially considering how many times I’ve commented on all your beautiful pancake, mouth watering recipes and stated “I’m totally going to try this” ….only to forget about it and never make them.

Not anymore! I loved making my own pancakes and thought they tasted absolutely amazing.

So here’s the recipe if you have some questionable bananas on your counter too 😉

Whole Wheat Banana Pancakes:

Ingredients:

  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 Tbsp brown sugar
  • 1 tsp vanilla
  • 2 overly ripe bananas
  • 3 Tbsp of melted butter
  • cinnamon to taste

[you may also add one egg, but I didn’t have any so I added 1/ 4 cup of apple sauce instead]

Directions:

  1. In a large bowl mix all your dry ingredients with a wire whisk.
  2. Melt the butter and combine it, the bananas, sugar, and vanilla in a separate bowl and mash with a fork.
  3. Mix into the dry ingredients until combined.
  4. Add cinnamon or any other spices you’d like.
  5. In a large frying pan, over medium heat, melt some more butter or oil and spoon cakes onto pan.
  6. You can flip the cakes when the top starts to bubble and they look like they’re golden on the bottom.
  7. Cook for another minute and then serve smothered in delicious maple syrup.

Logan loved them about as much as he loves his stuffed puppy…..

…which is saying a lot :)

  2. Peanut butter and syrup…healthy just flew right out the window.

    I always experiment with banana bread…adding new things and mixing it up…I usually like every loaf I make but the rest of the family definitely voice their opinions. ;-(

  3. Banana Nut muffins! I like syrup, but just enough to dampen the pancake or waffle. My best friend uses at least 2 cups on hers.

    BTW — I am waiting for THAT paycheck to come next Friday. Life happens and so do unexpected bills. So not fun!

  4. Love syrup!! And lots of it. My husband sometimes blends up special mixes with fruit in the blender. That never turns out poorly! I like freezing the bananas and blending them with chocolate milk for post-run recovery. Yum!

  5. I honestly dont think you can put enough syrup on pancakes. So – these pancakes are basically what I like to call food dirty talk. I also need you to come to NY right now and make these for me. I am sick and cannot even think of cooking :)

    Maple syrup on my pancakes all the way! Maybe whipped cream if we have any :)

  8. Overripe bananas always seem to make their way into the freezer this time of year to be used for banana soft serve!!! If you haven’t tried it yet, do it now!! 😉 My fav combination – blend together 1 frozen banana with a spoon of PB, a few chocolate chips and a splash of milk. It’s AWESOME.

    As for pancake topping – pure maple syrup always. 😉

    I almost always go with the maple syrup…. Being from Vermont, the land of the best maple syrup, it’d be blasphemous not to have it!

  10. I, my friend, am a lover of syrup. YUM and those pancakes look and sound YUM! Great job whipping those up and being frugal even if it was forced :) I hate when I am waiting on a paycheck and have to scrounge food instead of just going and buying something. If only we could all be rich!

  11. That reminded me of all the Sunday nights when Mum would make us banana fritters – which were basically banana pancakes. They were delicious.

  12. Great job!!! I’ve always wanted to be the kind of person who could throw things together and get something yummy! These look awesome and if Logan loved them then they must taste great too!! I’m a huge syrup fan!!
