Saying Goodbye & I need some baking help!

This past weekend we had to say goodbye (again) to Alex and Keren,  my bro & sis -in-law. They teach in Thailand and have been gone this past year. Thankfully we got a whole week with them at the cottage and got to see them one last time on Sunday.

*doesn’t it look like Alex & I are related and Colin & Keren are?? not the case ;)

They will both be out there teaching for at least another year. Who knows where they will go next :) We skype and stay in touch, but obviously it’d be nicer if we could all live in the same area.

*yep, that is me feeding Alex cake at Christmas :) lol

Logan loves them so much! He’s a big ham around them ;) He doesn’t quite understand their absence, obviously, but he always enjoys their company to the fullest :)

I’m sad but also pretty happy at the good times we had over the last month. I’ve definitely never eaten as much food as when I’m around Alex & Keren visiting ;) it’s always a good excuse to party!

Questions:

1. do you live close to your family?? if not, where do they/you live? how far away??

I live about 20mins to an hour away from almost ALL of my family. The furthest are Alex and Keren at a huge 12-13 hr FLIGHT away. Even when I was “away” at school it was only a 2-3hr drive. I long to move away but my family keeps me here :) xo

2. how many siblings do you have??

I have 3 siblings. I am the oldest ;) then there’s my beautiful sister Nicole and my awesome brother Jason. We all get along pretty well and I’m looking forward to hanging with them this Sunday along with my Grandma :D

  1. I live at least an hour away from my closest family too. My dad and grandma live about 4 1/2 hours away. It can be quite a hike!

    I go to Chocolate Covered Katie for all my dessert needs. ;) She’s got great recipes…the Cookie Dough Dip made out of chickpeas is great. I gave some to the Boyfriend and the Kid without telling them what was in it, and they both asked for more! That recipe is here:

    • I am super excited about this girl! thanks so much. I just didn’t like that so many recipes call for tofu, after the warnings I got on my last tofu recipe – now I’m paranoid! lol

      definitely going to try that dip!

  2. oh man that is so nice of them coming to visit, at least you find a way to stay in touch. I am the worst baker so no help there! I will be interested in seeing what other people come up with. You could always do the chocolate/avocado mousse triffle style with berries and coolwhip.

    • Mmmmm that sounds amazing Alex :) I am definitely going to try that the next time I have guests over. You can bet I’ll post whatever I end up creating :D

  3. My family all live 4 hours away while I’m at school :( It’s hard but luckily it is not horrible so I get to see them about once a month still! We are just a super close family, so a month is way too hard sometimes!

    I unfortunately don’t know any healthy chocolate recipes, I will just substitute the higher calorie/fat ingredients for lower ones. Such as applesauce or mashed bananas for oil and egg whites instead of whole eggs kind of thing. Good luck though, you’ll have to share what you end up finding!!! I could always use some healthy dessert options ;)

    • Hey I totally feel you. As I mentioned I went to school only 2-3hrs away and I cried all the time missing them :) it is hard when you’re used to having them close by and you’re close to your fam :D

      I will totally post what I come up with! I actually made these apple sauce cupcakes way back when Logan was a babe and they were so healthy – no eggs either and I loved them. I’ll whip up a batch for my next weekend entertaining :)

  4. My grandma lives about 3-4 hours away and she is my closest relative besides my parents. :) I have some cousins that live up in Minnesota and also some in California! So, not many relatives close to us.
    I have one sister that is 3 years older then me.
    Healthy desserts? Gosh, I don’t think I know any! ;)

    • Aw I live pretty close to my gma – but I should go to see her more. I think I’ll make that a goal of mine in the near future :)

      and don’t worry GG – you know me pretty well and know I could never post a healthy dessert that did taste good! So I’m on it :)

    I live about 15 minutes from most of my family (my family and in-laws) and I work with my dad so I see him everyday. One of my sisters lives about 3000 miles away though. :( I have three sisters and I’m the youngest, no brothers.

  7. I have four sisters (and one half brother, who’s also half Thai but we won’t talk about him) and all the sisters live in the same city AND we all get together weekly for a meal with my parents. So I guess we’re pretty close.

  9. I’m pretty lucky in that I live pretty close to my immediate family. Both my parents and my in-laws live within 15 minutes from our house, while my one brother lives in TO (so about an hour from us) and the other lives in Ottawa. My grandma’s however are back in my hometown of Cornwall so they’re about 3.5-4hrs away.

    As for siblings, well I have 2! ..or I could technically say 5 since i have 2 sister-in-laws and a brother-in-law! ;)
